Man Stew-Its not made of men but men like it.

This is so easy even a child could make it! I put this in the crock pot last night before bed so hubs and kids would have a warm lunch on a cold day. Good idea I thought!

5 potatoes
1 1/2 lbs stew meat
1 can mushroom soup
1 can tomato soup
1 pkg onion soup mix
1-2 cups frozen peas

Put veggies in slow cooker. Add the meat (Brown it first, if you want to). Combine soups, pour over top. Cover and cook on low.

Cheese and Corn Chowda

Saute:
10 slices diced bacon

Saute:
2 tbsp butter
2 tbsp Olive Oil
2 cups diced onion
1 cup diced celery
1/4 cup flour
2 tsp fresh dill
1 tsp salt
1/4 tsp pepper

Add:
6 cups chicken broth
1 pound peeled/diced potatoes
3 cups frozen corn--you can use corn off the cob if you're extra ambitious :)
1 cup heavy cream
1 cup shredded cheddar
2 tbsp cream cheese

Saute bacon in a large pot until crisp. Drain on paper towel and set aside. Pour off the drippings and return pot to burner. Melt butter with oil, add onion and celery. Sweat until soft. Stir in flour, dill, salt and pepper. Cook for 2 minutes.

Add broth, potatoes and corn. Bring to a boil and reduce heat to medium. Simmer until potatoes are tender. Stir in cream, both cheeses and reserved bacon. Simmer until cheese melts. Garnish with chives and dill.

Do not let the soup boil at cheese addition time or it may curdle.

Creamy Mushroom soup



1/4 cup butter
2 cups sliced white mushrooms -or an assortment of your choice
2 shallots, chopped
2 tablespoons all-purpose flour
1 (14.5 ounce) can chicken broth
1 cup half-and-half
salt and pepper to taste


DIRECTIONS
Melt the butter in a large saucepan over medium-high heat. Saute the shiitake mushrooms, portobello mushrooms, and shallots for about 5 minutes, or until soft. Mix in the flour until smooth. Gradually stir in the chicken broth. Cook, stirring, 5 minutes, or until thick and bubbly.
Stir in the half-and-half, season with salt and pepper. Heat through, but do not boil.
**I pureed mine in the blender.

Meatballs with tomato basil sauce

Meatballs

2 lbs ground beef
1 pkg Stove Top
1 cup water
2 eggs

Mix all together and make meatballs. Put in 400 degree oven 15-20 minutes until done.

Tomato Basil Sauce

1 jar pasta sauce
1 container cream cheese
2 tbsp fresh basil

Cook until sauce and cheese is blended. Add meatballs to sauce. Serve with fettuccine.

Another time saving easy peasy

Since hockey is back in action full force and I have a schwack load of chicken in my fridge (we eat more chicken than anything in this house) I decided to make it a simple night again tonight.

Cheesy Pasta Skillet

3 cups uncooked rotini
5 cups chicken in bite sized pieces
3 cups frozen mixed veg thawed and drained
1 cup salsa
2 1/2 cups shredded cheddar

Cook rotini. Meanwhile cook chicken-or dont if you already have it cooked :) - Add vegetables and salsa cook until heated through. Drain pasta and add to skillet with cheese. Stir until cheese is melted.

Easy? Yup! I think this is going to end up in a casserole dish rather than a skillet tonight. If my family is not as starving as lastnight maybe this time I can post a pic....

Time savin easy peasy

We had this lastnight... I roasted three chickens on Monday to have on hand for dinners or lunches. It seems to me the more time, ingredients and money I put into many dinners-my kids would rather have something this fast and this easy. Fine by me!

Easy Pot pie

1 pkg stove top
3 cups chopped cooked chicken
3 cups frozen mixed veggies
1 can mushroom soup
1/2 cup milk

Heat oven to 375'. Prepare the stuffing according to package. Combine chicken and vegetables in casserole dish. Mix milk and soup together and pour over chicken mixture. Top with stuffing.

Bake for 30 mins or until hot and bubbly.

Sunburst Stir Fry

Yummy Yunmy...And I ain't talking bout that new shitty restaurant in town...


1 can pineapple
3 chicken breasts
2 cloves garlic
1 tbsp grated ginger
2 tbsp oil
2 sliced carrots
1 green pepper
3 sliced green onions

Sauce:1/3 cup reserved pineapple juice
1/3 cup soy sauce
1 tbsp cornstarch
1 tbsp sesame oil
Drain pineapple, reserving 1/3 cup juice.

Cut chicken into chunks and stir fry with garlic and ginger in oil. Add veggies, cover and steam for a few minutes until tender crisp. Combine sauce ingredients and pour into skillet with green onions. Toss.

This is pretty freakin good I must admit. We had this for dinner tonight and the whole family enjoyed it A LOT! I would have posted a pic but we ate it waaaay too fast!

Linguine with Garlic Shrimp and homemade Pesto

Pesto:
1 1/2 cups lightly packed basil leaves
1/2 cups toasted pine nuts~~toss/stir in pan for about 5 mins until golden
1/2 c fresh grated parmesan
1/4 cup olive oil
salt and freshly ground pepper to taste

Grind basil,pine nuts, parmesan in food processor. Slowly adding the olive oil until a smooth sauce forms. Season with salt and pepper and cover.

Linguine:

9oz fresh linguine
2 garlic cloves
20 large shrimp
parm shavings for garnish

Boil water for linguine. While linguine is cooking, cook shrimp in olive oil and garlic. Stir the pesto into the shrimp mixture. Drain the linguine reserving about 1/2 cup water. Toss linguine in large bowl with the shrimp pesto mixture adding enough of the reserved cooking liquid to moisten the sauce so it coats the pasta evenly.

This is freakin wicked. It tastes so very fresh!"

Absolute Best BBQ Chicken

It really IS the BEST!




Chicken pieces

Salt and pepper



For the sauce:

1/2 cup diced onion

1 clove crushed garlic

2 cups root beer

3/4 cup ketchup

1/2 cup apple cider vinegar

1/4 cup brown sugar

1/4 cup mustard

2 Tablespoons molasses

1 Tablespoon Worchester



Preheat oven to 400.



Chicken:

Arrange on baking sheet and add salt and pepper to taste. Bake for 45 mins or until done.



Preheat BBQ.



Sauce:Saute onion and garlic in olive oil for a couple minutes. Add root beer, bring to a boil, reduce heat and reduce. Add ketchup, vinegar, brown sugar, mustard, molasses and worchester. Simmer for about 5 minutes. Dip chicken into bbq sauce to coat. Grill. Dip in sauce again, turn over and grill until charred and crisp.



Serve with sliced tomatoes on the side.

Lemon Scented Dill and Bacon Soup

5 slices bacon-cut into 1/5" pieces

4 cups chicken stock

2 cloves chopped garlic

3 large potatoes peeled and cut into 1" pieces

2 stalks celery finely chopped

salt

pepper

1 tbsp lightly packed grated lemon zes

t1/2 cup whipping cream

2 tsp chopped fresh dill



Cook bacon until crisp drain, set aside. Combine stock, garlic,potatoes,celery, salt and pepperin large pot and bring to a low boil. Simmer for 15-20 minutes or until the potatoes are tender. Put in blender and puree until smooth. Return to pot, over medium heat and stir in lemon zest and cream. Simmer for 5 more minutes. Just before serving stir in dill. Garnish each bowl with bacon.
